Brewed with a local wheat and koji (malted rice) which is a vital ingredient to create sake. This beer has a uniquely sweet flavor of rice koji and a naturalacidity caused by the fermentation.
Kiuchi Brewery was established as sake brewery. In 1994, they decided to start a small beer brewery. Knowing nothing about beer brewing even though they have been brewing Japanese sake for centuries, they asked for professional advice at big beer manufacturers in Japan. They almost give up as it costs hundreds of millions of yen, when they found DME solutions who manufacture beer brewing facilities in Canada.
Hitachino Nest Beer started with only three beers, and since then innovative beers been adding to the line-up every year.
